Strictly regulated and registered in 1996 in a bill of specifications, the production of “Appellation Cassis” wines is 67% white, 30% red and 3% rosé.Each cultivation must contain 60% Marsanne and Clairette grape, the appellation’s two principal varieties.The chateau currently marketed is the principal producer of AOP Cassis. A 25-hectare limestone-clay plot is located near the chateau, while a second 12-hectare plot is in a magnificent unspoilt environment 10 minutes from the chateau.
